Cake flour

Cake flour is made from endosperm which is the softest part of the wheat kernel. It is bleached which breaks down the protein. This allows it to carry a lot of sugar. It absorbs butter and fats well because of it being so fine. It does not contain wheat germ and bran and is used mainly for bakes and sauces.
